Cuban-style picadillo scaled to one plate: ground turkey simmered with tomatoes, black beans, green olives and raisins, served over brown rice.

The raisins are not a garnish. Sweet against salty olives is what makes picadillo taste like picadillo, so they go in with the tomatoes and soften into the sauce rather than sitting on top.

It is better on day two. The sauce tightens overnight and the spices settle, so this is a good one to make when you want lunch already sorted.

Cook’s tips
  • The raisins are not a garnish — they are what makes picadillo taste like picadillo. Add them with the tomatoes so they soften in the sauce.
  • Rinsing canned beans washes off a large part of the sodium they sit in, even the low-sodium kind.
  • Cook ground turkey and ground beef to 165°F and 160°F respectively, checked with a food thermometer.
  • Contains: none of the nine major food allergens.
  • Naturally gluten-free and dairy-free. For a meatless version, swap the meat for an extra 1/2 cup of black beans.

Method

  1. Wash your hands and all surfaces before you start.
  2. Cook the brown rice in unsalted water according to the package. Set it aside.
  3. Heat the oil in a skillet over medium heat. Add the onion, pepper and garlic and cook about 10 minutes, until softened and lightly browned.
  4. Stir in the oregano, cumin, salt and pepper.
  5. Add the ground meat in small pieces and cook about 10 minutes, breaking it up, until no pink remains.
  6. Add the tomatoes with their juice, the black beans, the olives and the raisins. Simmer 10 minutes, until the sauce thickens.
  7. Serve over the brown rice.
