The pink pigment is not a warning sign

Astaxanthin is a carotenoid pigment that salmon obtain through food and deposit in their flesh. Wild salmon obtain it through the aquatic food chain; farmed salmon receive approved carotenoid sources in feed. At the amounts naturally present in salmon, the pigment itself is not considered a sign that the fish is harmful.
