Candied yams in a lighter form: boiled sweet potato sliced and layered with a spiced brown sugar mix, dotted with a little butter and baked with orange juice for 20 minutes. A quarter-cup serving comes to about 79 calories with 1.5 g of fibre, far less than the marshmallow-topped version.

Boil the sweet potatoes only until a knife meets slight resistance, about 20 minutes for halves. Fully soft potatoes fall apart when sliced and turn to mush in the oven. Peel while still warm, slice a quarter inch thick and layer them so the sugar sits between the slices.

This is a holiday side that scales easily and can be assembled a day ahead and baked before serving. Pair it with roast turkey, ham or pork. A splash of the orange juice over the top after baking brightens it, and a pinch of ground ginger in the sugar mix works well.

Cook’s tips
  • Slice the sweet potatoes evenly so every layer softens at the same rate.
  • Grate only the orange zest, not the white pith, which turns the sugar mix bitter.
  • Cool leftovers and refrigerate within 2 hours; they keep 4 days and reheat covered at 325°F.
  • Contains: milk (butter), wheat (flour).
  • Use a plant-based spread for dairy-free and cornstarch in place of the flour for gluten-free; neither changes the result.

Method

  1. Wash your hands and all surfaces before you start.
  2. Preheat the oven to 350°F. Halve the sweet potatoes and boil about 20 minutes, until tender but firm.
  3. When cool enough to handle, peel and slice 1/4 inch thick.
  4. Mix the brown sugar, flour, salt, cinnamon, nutmeg and orange peel.
  5. Lay half the slices in a baking dish, sprinkle with half the sugar mix and dot with half the butter.
  6. Add the remaining slices, sugar mix and butter, then pour the orange juice over.
  7. Bake uncovered 20 minutes, until bubbling.
