Asparagus in a skillet with slivered almonds, a pinch of ground ginger and a pinch of sugar: 64 calories a serving and 2.3 g protein. It takes ten minutes on the stove, which matters on a day when the oven is fully booked.
Everything goes in at once and the heat drops as soon as the spears turn bright green. From there it is covered, low, and shaken every so often until a fork just goes through. Asparagus goes from crisp to limp in about a minute, so pull it early.
For a Christmas dinner it scales cleanly to a big skillet, and the almonds can be toasted a day ahead and scattered on at the end. Cut the spears on a long diagonal – it takes the same time and looks like you tried.
Ingredients
- Asparagus3 oz, sliced diagonally (85 g)
- Almonds (Raw, Unsalted)2 teaspoons slivered (5 g)
- Soybean Oil1/4 teaspoon (1 g)
- Ground gingera pinch
- Sugara pinch

- Pull the pan off the heat while a fork meets slight resistance - overcooked asparagus cannot be rescued.
- Toast the almonds separately a day ahead if you want them crisper than the pan will leave them.
- Refrigerate leftovers within 2 hours; they are better cold in a salad than reheated.
- Contains: tree nuts (slivered almonds).
- Leave the almonds out for a nut-free table, or swap in toasted pumpkin seeds. Naturally gluten-free and dairy-free.
Method
- Wash your hands and all surfaces before you start.
- Rinse the asparagus and trim the tough ends.
- Slice the spears diagonally into pieces about 3/4 inch long.
- Heat the oil in a skillet over medium heat and add the asparagus, almonds, ginger, sugar, salt and pepper.
- Stir and sauté 3 to 5 minutes, until the asparagus turns bright green.
- Reduce the heat to medium-low, cover and cook until just fork-tender, shaking the pan now and then.
- Serve straight away and refrigerate leftovers within 2 hours.
