This is oatmeal wearing a costume. The same bowl of rolled oats, but the toppings are laid out banana-split style: sliced banana down the middle, strawberries on one side, chopped walnuts on the other.

The toppings do real work here. Walnuts add fat that slows the bowl down, the fruit does most of the sweetening, and the honey stays at a teaspoon instead of a spoonful.   • Let the oats sit a couple of minutes off the heat to thicken.
  • Add the banana and toppings at the end so they stay fresh, not mushy.
  • Nut-free swap: toasted pumpkin seeds give the same crunch without the nuts.

Method

  1. Wash your hands and all surfaces before you start.
  2. Bring the water or milk to a gentle boil, then stir in the oats.
  3. Cook, stirring, 3-5 minutes until thick and creamy.
  4. Spoon into a bowl and top with the sliced banana and strawberries.
  5. Scatter over the walnuts and drizzle with honey.
