DifficultyMedium

Apple crisp with a five-ingredient topping and no pastry to make. This is the USDA MyPlate version, and one serving is 181 calories.

The apple matters more than anything else: use something firm and tart like Granny Smith. Softer varieties turn to sauce under the topping and you lose the contrast that the dish is built on.

Leave lumps in the crumble when you rub it together. Worked to an even texture, it bakes into one solid sheet rather than a crisp.

Ingredients

Ingredients

Amounts below make 8 servings, one serving is 1/8 of the pan.

Cook’s tips
  • Use a firm, tart apple. Granny Smith holds its shape; softer varieties collapse into sauce under the topping.
  • Leave lumps in the crumble. Rubbed to an even sand it bakes into one solid sheet instead of a crisp topping.
  • The 10-minute rest matters. The fruit thickens as it cools and the topping firms up.
  • Contains: wheat (flour). Oats are wheat-free but are usually processed alongside wheat, so use certified gluten-free oats if you need them. Margarine may contain milk or soy — check the label.
  • Keeps 3 days at room temperature covered. Reheat in the oven, not the microwave, or the topping goes soft.

Method

  1. Wash your hands and all surfaces before you start.
  2. Heat the oven to 375°F (190°C).
  3. Peel, core and slice the apples about 1/4 inch thick and spread them in a baking dish.
  4. In a bowl, rub the margarine into the flour, oats, brown sugar and cinnamon with your fingertips until it looks like coarse crumbs. Stop while there are still lumps — uniform crumbs bake into a solid sheet.
  5. Scatter the topping over the apples, right to the edges of the dish.
  6. Bake 30 to 35 minutes, until the topping is golden and the fruit bubbles at the sides.
  7. Cool 10 minutes before serving. Straight from the oven the fruit is molten and the topping has not set.
