Method

  1. Wash your hands and all surfaces before you start.
  2. Flake the cooked salmon into bite-size pieces, removing any bones.
  3. In a bowl, combine the salad greens, cucumber and cherry tomatoes.
  4. Whisk the olive oil and lemon juice with a pinch of salt and pepper.
  5. Add the salmon, drizzle with the dressing and toss gently. Serve immediately.
