A bowl is an assembly job with a grain at the bottom. Cook the quinoa, let it cool, and everything after that is chopping.

Quinoa and black beans give the bowl its body, and the raw vegetables keep it from feeling like leftovers. Dress it right before eating, or the cucumber starts weeping into the grain.

Cook’s tips
  • Make it ahead - the salad keeps 3 days covered in the fridge and the flavor improves overnight.
  • No fresh chiles? Leave them out; the dish is mild and still works.
  • Rinsing canned beans washes away a large share of the added sodium.
  • Contains: none of the nine major food allergens.
  • Naturally gluten-free, dairy-free and plant-based as written.

Method

  1. Wash your hands and all surfaces before you start.
  2. Rinse the quinoa under cold running water.
  3. Bring the water to a boil in a saucepan, add the quinoa, return to a boil, then simmer covered until the water is absorbed, 10-15 minutes. Let it cool for about 15 minutes.
  4. While the quinoa cooks, whisk the olive oil, lime juice, cumin, coriander, chopped cilantro and minced scallions together in a small bowl and set the dressing aside.
  5. Combine the chopped tomato, red and green bell pepper, green chiles and the rinsed black beans in a large bowl.
  6. Add the cooled quinoa and the dressing, season with black pepper and toss until everything is evenly coated.
  7. Cover and refrigerate until ready to serve. The salad tastes best after at least 30 minutes in the fridge.
