Oven baked sweet potato fries are sliced sweet potato tossed in olive oil, seasoned with salt, pepper and optional paprika and garlic powder, and roasted at 425°F. A serving is about 110 calories with 2.9 g fibre, a lighter alternative to deep-fried fries with the same sweet, browned edges.

Space is the whole trick. Sweet potato holds a lot of water, and pieces packed together on the sheet steam in it and come out soft and pale. Lay them in a single layer with gaps, use two sheets if needed, and turn them once so both sides meet the hot metal.

They are best straight from the oven; sweet potato fries soften as they sit. Leftovers can be crisped again in a hot skillet or an air fryer. Serve them beside a burger or grilled chicken, or with a yogurt dip mixed with lime and a little chili.

Cook’s tips
  • Cut the pieces to the same thickness so they finish together; 1/4 inch is thin enough to crisp without burning.
  • Do not crowd the pan; crowded sweet potato steams instead of browning.
  • Eat within 2 hours of baking, or refrigerate up to 3 days and re-crisp in a hot skillet or air fryer.
  • Contains: none of the nine major food allergens.
  • Naturally gluten-free and dairy-free as written.

Method

  1. Wash your hands and all surfaces before you start.
  2. Preheat the oven to 425°F.
  3. Wash and peel the sweet potato and cut it into 1/4-inch sticks or slices.
  4. Toss the pieces with the olive oil until coated, then season with salt, pepper and paprika or garlic powder if using.
  5. Spread in a single layer on a baking sheet with space between the pieces.
  6. Bake about 20 minutes, turning once or twice, until tender and golden brown. Serve hot.
