A smooth butternut squash soup made creamy with fat-free evaporated milk instead of cream, sweetened only by shredded apple softened in olive oil and warmed with pumpkin pie spice. A generous bowl of one and a half cups runs about 364 calories with roughly 19 g of protein, most of it from the milk.

The evaporated milk has to go in slowly. Stir it into the hot squash half a cup at a time, and take the pan off the heat the moment the soup is about to boil. Boiled evaporated milk splits and turns grainy; brought just to the edge, it stays glossy and thick. Frozen puree saves peeling and roasting a squash.

The reserved raw apple on top is not decoration; the sharp, crunchy shreds cut the sweetness of the soup. It keeps four days in the fridge and reheats gently on the stove. Serve it with a slice of whole-grain toast or beside a green salad, and a little cayenne is a good addition if you like heat.

Ingredients

Ingredients

Servings
1
  • Frozen pureed butternut squash8 oz (227 g)
  • Fat-free evaporated milk3/4 cup (192 g)
  • Apple (Gala)1/2 medium, peeled and shredded (91 g)
  • Olive Oil (Extra Virgin)3/4 teaspoon (3.5 g)
  • Pumpkin pie spice1/8 teaspoon, plus more to finish
  • Salt and black peppera pinch of each
Cook’s tips
  • Take the soup off the heat before it boils; evaporated milk curdles at a full boil.
  • Shred the apple on a box grater straight into the pan so it does not have time to brown.
  • Cool leftovers quickly and refrigerate within 2 hours; the soup keeps 4 days and reheats gently over low heat.
  • Contains: milk (evaporated milk).
  • Naturally gluten-free as written. For dairy-free, use an equal amount of unsweetened oat or soy milk and simmer a few minutes longer to thicken.

Method

  1. Wash your hands and all surfaces before you start.
  2. Put the frozen squash in a covered microwave-safe dish and defrost on medium power 3 to 5 minutes, until mostly thawed.
  3. Peel and shred the apple. Set 1 tablespoon aside for the top.
  4. Warm the oil in a saucepan over medium heat. Cook the rest of the apple, stirring, about 5 minutes until soft.
  5. Stir in the squash and the pumpkin pie spice.
  6. Add the evaporated milk a few tablespoons at a time, stirring after each addition. Season with salt and pepper.
  7. Heat, stirring, just until the soup is about to boil. Ladle into a bowl and top with the reserved apple.
