Different technologies can create a similar thick texture

Traditional post-fermentation straining uses cloth, centrifugation, or membranes to remove acid whey, concentrating protein and solids while some lactose and minerals leave with the whey. Ultrafiltration can concentrate milk before fermentation and produces less acid whey. Some Greek-style products instead add milk protein concentrate or stabilizers, so texture alone does not reveal how the yogurt was made—compare protein and ingredients on the label.
