A microwave baked apple with cinnamon is the fastest warm dessert there is: one cored apple filled with a spoon of brown sugar and cinnamon, softened in the microwave in under ten minutes. One apple comes to about 163 calories with almost 4 g of fibre.

The core has to come out cleanly but the bottom must stay closed, otherwise the sugar runs out into the dish instead of melting into the fruit. Cut a thin slice off the base so the apple stands, then core from the top and stop about half an inch short of the bottom.

Firm apples such as Gala, Honeycrisp or Granny Smith hold their shape; soft varieties collapse into sauce. Serve with a spoon of plain yogurt for a breakfast that feels like dessert. A cooked apple keeps two days in the fridge and reheats in 30 seconds.

Ingredients

Servings
1
  • Apple (Gala)1 medium, baking, cored (180 g)
  • Brown sugar1 tablespoon, packed (14 g)
  • Ground cinnamon1/4 teaspoon
Cook’s tips
  • Cooking time depends on the size and variety of the apple; start checking at 2 minutes and stop when a knife slides in without resistance.
  • For four apples at once, arrange them in a ring in the dish and cook 6 to 10 minutes, turning the dish once.
  • Refrigerate leftover cooked apples within two hours; they keep two days and reheat in about 30 seconds.
  • Contains: none of the nine major food allergens.
  • Naturally gluten-free and dairy-free as written. Swap the brown sugar for 2 teaspoons of maple syrup if you prefer.

Method

  1. Wash your hands and all surfaces before you start.
  2. Wash the apple. Cut a thin slice off the bottom so it stands flat.
  3. Core the apple from the top, stopping about half an inch short of the bottom so the base stays closed.
  4. Stand the apple in a microwave-safe dish.
  5. Mix the brown sugar and cinnamon and spoon the mixture into the cavity.
  6. Cover loosely with wax paper and microwave on high 2 to 4 minutes, until the apple is soft when pierced.
  7. Let it stand 2 minutes before eating; the filling is very hot.
