Crisp Topping

Overview

I enjoy traditional pie crust but love the taste and texture of crisp toppings for fruit pies. This crisp topping is healthier than most because it uses a small amount of butter and heart healthy oil. The result is a wonderful, buttery taste without an excess of butter.

  • Prep time: 20 minutes
  • Makes: One 9 x 9-inch glass baking dish or one 9-inch pie plate
  • Storage: Wrap tightly in plastic wrap and refrigerate for up to 1 week

Ingredients

  • 1½ Tbsp. melted butter
  • 1 Tbsp. canola oil
  • 1 Tbsp. water
  • ¼ cup packed light brown sugar
  • 1/8 tsp. salt
  • ½ tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • ¼ cup whole wheat pastry flour or whole wheat graham flour
  • 1 cup old fashioned oats

Directions

  1. In a large microwave-safe bowl, melt the butter in the microwave until soft. Add the oil and water, then mix well.
  2. Stir in the brown sugar and salt until fully combined.
  3. In a medium bowl, mix together the cinnamon, flour, and oats. Add this dry mixture to the butter-oil mixture.
  4. Using a fork or pastry cutter, work the mixtures together until it resembles a coarse, crumbly topping.
  5. Prepare your fruit pie filling and pour it into your pie dish or glass baking dish.
  6. Sprinkle the oatmeal mixture evenly over the fruit pie filling and follow your pie’s baking directions.

Variation

For a different texture, try this variation:

  1. Press half of the crisp topping mixture into the bottom of the prepared baking dish.
  2. Fill with your fruit pie mixture.
  3. Evenly sprinkle the remaining crisp mixture on top of the filling and bake according to your pie directions.
