Hearty and Easy Vegetarian Chili

Ingredients:
2 teaspoons canola oil
1 cup chopped onion
1 cup chopped red bell pepper
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
3 garlic cloves, minced
1 (4.5-ounce) can chopped green chiles
1 cup frozen corn, thawed
1 (15-ounce) can black beans, drained and rinsed
1 (14.5-ounce) can no-salt-added diced tomatoes, undrained
1 (8-ounce) can all natural tomato sauce
1 (6-ounce) container plain nonfat Greek yogurt
1 avocado, pitted and chopped
Corn tortilla chips (optional)
Directions:
In a medium-sized pot, heat the oil over medium-high heat. Add the onion and bell pepper; sauté for 3 minutes.
Add the chili powder and the next four ingredients (chili powder through green chiles); cook for 1 minute.
Stir in the corn, beans, diced tomato and tomato sauce; bring to a boil.
Cover, reduce the heat, and simmer for 20 minutes, or place in a slow cooker and simmer on low until ready to eat.
Serve with Greek yogurt, chips and sliced avocado.
